Salad for breakfast? Why not?Cut down all the carb-loaded breakfast breads, and blend together your bread fillings with some low-carb vegetables to make a healthy salad bowl. Get some chopped bacon, hard boiled eggs, low-carb chopped vegetables like cherry tomatoes, cucumbers, and lettuce, and mix them all together. Season it with salt, pepper, and vinegar. Add some diced olives and cheese to make it even flavorful and healthy.
Prepare the dressing first, mix together olive oil, lemon juice, salt, pepper, vinegar, garlic powder and some Italian seasoning. Set aside and refrigerate the dressing.
Cook the bacon strips on stove and make them crispy. Set them aside to cool, then chop into chunky pieces (or bacon bits at your discretion).
Hard boil an egg by boiling it in a pot of water for 12 minutes. Flash the hard boiled egg with cold water before peeling and slicing in half.
Then arrange your salad, chop the lettuce on a plate, and top it off with cherry tomatoes, chopped cucumber, and crumbled feta. Finally, add in the bacon pieces and egg.
Add the dressing on the salad, or keep it aside in a bowl before serving.
