Keto Eggs and Sausage Polish Breakfast

A quick recipe with three main components, i.e. grilled cucumbers and Polish sausages, and a bed full of fluffy scrambled eggs. The Polish inspired breakfast is filled with natural fats and all essential ingredients to start your day with a delicious meal.

Ingredients

  • 4 pieces Cucumber raw, without peel
  • 1/2 tsp Rice Vinegar 2 grams
  • 1/4 tsp Salt
  • 1/8 tsp Stevia in the raw, bakers bag
  • 1 tsp Dill use fresh
  • 1/8 tsp Celery Seed
  • 3 ounce Kielbasa 85 grams
  • 2 pieces Raw Egg 100 grams
  • 1/8 tsp Salt
  • 1/8 tsp Black Pepper use ground
  • 1/4 tsp Onion Powder
  • 1/4 tsp Paprika
  • 1/2 tbsp Butter 7 grams

Instructions

  • Peel and slice a cucumber into thin slices. Use thinner slices for this recipe, of about 1/8 inch.
  • Take a bowl to toss the cucumber slices with rice vinegar, a pinch of salt, stevia, celery seed, and chopped dill. Cover the bowl with cling sheet and refrigerate. You can meal prep this step before hand for more pickled and tender cucumber slices.
  • Slice a piece of kielbasa link into 2 long halves. Put the insides of the sausage in a pan on medium-high heat with few drops of oil. Grill the sausages for a few minutes or till it gets a light char on it. Then set the cooked sausage aside in a plate.
  • Add the eggs and all seasonings in a bowl, and whisk them together.
  • Use a clean skillet and melt the butter in it on medium-low heat. Add in the egg mixture and slowly stir until it scrambles into fluffy cooked eggs.
  • Place your scrambled eggs and quick-pickled cucumbers on a serving plate along with the sausage. Add some cheddar cheese and dill to garnish your dish, you may also add other options you like sour cream or Greek yoghurt as a topping.
